  1. Place egg yolk and sugar in a glass or cup.
  2. Whip vigorously with a fork or small whisk until pale, creamy and doubled in volume (like thick zabaglione).
  3. Pour in a splash of red wine (if using) and whip briefly.
  4. Add hot coffee, stir quickly and drink immediately while foamy.
